Ingredients

1 cup fresh or frozen peas (blanched, refreshed)

1/3 cup each mint and flat-leaf parsley torn + extra mint to serve

1/3 cup (80ml) extra virgin olive oil

2 tbsp. lemon juice

Vanella burrata
-
Pinch of dried chilli flakes

Serve with Eumundi Meats organic lamb of your choice

- Method
- Lightly crush blanched peas with a large spoon or fork Add the mint and parsley and stir to combine Add the oil and lemon juice, and a pinch of salt. Stir to combine. Divide pea salad between two bowls and place half a burrata on each. Sprinkle with dried chilli. Serve with Tanglewood sourdough and Eumundi Meats Organic lamb of your choice.
